You've probably heard about how amazing broth is from how popular it has become these days. Well it is amazing! And it's actually a very old nourishing tradition. When you simmer your broth for many hours, you get access the healing properties from the herbs, vegetables, and bones (if you choose to use bones). Vegetable broth without bones is highly nourishing, just as bone broth is. Below, you will find a recipe for each.

 

 

Chicken Bone Broth

 

1. In a large pot or slow-cooker, add...

  • 2 pounds chicken backs

  • 2 celery stalks

  • 1/2 carrot

  • 1 onion

  • 1 clove of garlic

  • thyme

  • rosemary

  • sage

  • 2 tbsp or a splash of apple cider vinegar

  • a few pinches of salt and pepper

 

2. Fill with water until about 1.5 inches from the top.

 

3. If you're using a pot on the stove, turn the flame to high until boiling and then cover and simmer on low for 24-36 hours. If you're using a slow-cooker, cook on low for 24-48 hours.

 

4. Let cool until warm. Pour through a strainer into storage containers or glass jars. Compost the mushy vegetables and bones.

 

5. Enjoy this healing broth!

 

 

Vegetable Broth

 

1. In a large pot or slow-cooker, add...

  • 2 sweet potatoes, quartered

  • 1 red skin potato, quartered

  • 2 celery stalks

  • 1 carrot

  • 1 onion

  • 1 leek

  • 1 clove of garlic

  • small slice of fresh ginger

  • thyme

  • rosemary

  • sage

  • 1-2 strips of kombu

  • quarter bunch of parsley

  • a splash of apple cider vinegar

  • a few pinches of salt and pepper

 

2. Fill with water until it's covering the ingredients.

 

3. If you're using a pot on the stove, turn the flame to high until boiling and then cover and simmer on low for 2 hours. If you're using a slow-cooker, set to low and cook for 6 hours.

 

4. Let cool until warm but not hot. Pour through a strainer into storage containers or glass jars. Compost the mushy vegetables.

 

5. Enjoy this healing broth!
